Yellow and white seems like a perfect palette for spring with all the daffodils coming up in the garden. It’s also a beautiful palette for Mother’s Day, which is Sunday, May 13th- so if you didn’t get a gift for mom yet, better do it this week. A yellow and white luncheon or afternoon tea and cake could be a gorgeous way to celebrate Mother’s Day. Usually when I think of yellow I think of lemons, but for this cake, baker Jim Smeal used pineapple. This cake is a fresh-coconut butter cake with thinly sliced fresh pineapple between the layers and frosted with Swiss meringue buttercream. A favorite bakery of mine is Tate’s Bakery– they have the most fabulous white coconut cakes and cupcakes and the owner has a book with recipes if you are looking for ideas on what to make yourself. A crisp white table cloth, your white everyday dishes and an arrangement of yellow daffodils for a centerpiece is a very quick and simple, but beautiful table setting for Mother’s Day. To really keep things looking light and airy, ask everyone to bring their gift wrapped in yellow and white. (to make things easy on your guests you could pick up white wrapping paper, white bags and yellow and white ribbon so they can wrap their present when they arrive at your home- ask them to come 20-30 minutes before you have your mother arrive so all the gifts are wrapped and ready. You could display them on a gift table or place them down the center of your dining table as the centerpiece if they aren’t too bulky) The Container Store usually has plain white wrapping paper and lots of boxes and ribbon to choose from.
